Tasting

An expressive and lemony-coloured white wine. On the nose are notes of macerated lemon. The wine is generous on the palate and has citrus aromas, perfectly blended by acidity and minerality

Winemaking

The harvest is always done early in the morning. Juice is drained and refrigerated then directly pressed. Settling and vinification in stainless steel vats.

Gastronomy

Enjoy this wine during a convivial moment as an aperitif, with a mozzarella salad with Corsican olive oil or a fish carpaccio.

Serve chilled (6/8°C)

Nielluciu

Grape

Its name comes from the Corsican word "Niellu" meaning black, dark. It is said that it smells like har fur and licorice. Its aromas of red berries, violets, spices and apricots, its power and racy personality have made it famous.

Tasting

Nose : fruits rouges et noirs et fruits à noyaux confiturés
On the palate: : superbe de profondeur, de finesse et complexe, avec une attaque sur les fruits et une sensation crémeuse.

Winemaking

Pressing: Grapes are destemmed but not crushed.
Fermentation: Malolactic
Aging: Vats temperature of 25/31 °C, moderate extraction during 20/25 days, then maturation for 10 months in oak barrels.

Gastronomy

This wine marvellously accompanies traditional Corsican or Mediterranean cuisine, meat stew and cheeses. Serve at room temperature (17/18°C)

Sciaccarellu

Grape

His name means “cracking between the teeth”. Juicy, it has silky tannins and peppery bouquet with notes of toasted wood and maquis flowers. The low-colored juices are favored for rosés and young red wines.

Tasting

Visual aspect ink with shades ranging from copper to salmon and gradient on raspberry color. Bright and limpid.
Nose Flavors of wild strawberries, currants and candies with a hint of pomegranate.
On the palate: Supple and fruity wine in attack, then a more acidulous taste.

Winemaking

Pressing: Delicate
Fermentation: Low temperature.
Aging: : macération légère et courte. Débourbage à froid.

Gastronomy

Enjoy it on a salade nicoise, stuffed peppers and tomatoes, grilled meat and typical Mediterranean dishes.
Serve chilled (10/12°C)

Vermentinu

Grape

Vermentinu wines are dry and distinctive, balanced, ample and powerful. Aromas are complex, floral and sometimes mineral.

Winemaking

Pressing: Elastic membrane press.
Fermentation: : fermentation à froid dans cuves en acier inoxydable. Vieillissement sur lies.
Aging: Pellicular maceration.
